I did it. I wrote the email to M. last night, quitting cooking. I realized that I felt bad just looking at her containers, sitting here on my floor. It was making my valuable rest time stressful.
So, I politely and truthfully quit. I told her I needed to take care of myself and something had to go. And that I had found her a replacement. And would give this replacement her favorite recipes.
But that I wasn't going to do it any more.
How did I feel? Relieved. Not really guilty. Pretty happy.
Of course, I haven't gotten the reply, yet.

You go girl! It can be so hard to say no, can't it? I don't know if it's a firstborn thing, or a Virgo thing, or just a thing we have in common, but I know what it's like. I'll email you more thoughts on this, but kudos to you for realizing something had to go, and then actually letting it go.
